Fond Cyprès “Cyprès de Toi” Rouge 2021

Laetita Ourliac and Rodolphe Gianesini farm 15 hectares of farmland with Cypress trees, olive trees, and gardens of vegetables and herbs, in addition to their vineyards. The name Cypres de Toi is a play on words on ‘Pres de Toi’ which is French for ‘Next to You,’ and they are very much wines to share with friends. Their Rouge is a soulful and quaffable zero-zero blend of Syrah, Grenache, and Carignan, earthy and peppery with plenty of dark fruit and brambles. A perfect red for all occasions!

Growing Area: Escales, northern Corbieres, from calcareous soil and blue marl

Farming: Organic

Varieties: 60% Syrah, 30% Grenache, 10% Carignan

Yeasts: Native

Fermentation: Destemmed and fermented for three weeks in concrete

Aging: Aged in flex tank

Filtration: Unfined / Unfiltered

Sulfites: None added

Alcohol: 13%
