‘Tsoin tsoin’ is French for ‘Boom boom,’ and this is a light and juicy cabernet franc and gamay from Bourgueil producer Laurent Herlin, a former computer engineer who now works 6 hectares of vines with exclusively organic and biodynamic farming. Made with carbonic maceration, it is plush and easy-drinking, with wild berry and soft tannins, herbs and green pepper, and a terroir-expressive mineral backbone. Serve with a chill.
