Mas Candi Corpinnat MC BRUT NATURE Cava
While in Penedes most farmers sell fruit to large Cava houses, Mas Candi make their own wines from old vines inherited from family, while also eliminating use of chemicals in the vineyards. Likewise, the Corpinnat appellation was created by winemakers who felt that the Cava name has been diminished by industrialized schlock. A return to Cava like it should be!
This flagship Corpinnat Brut Nature is made from a blend of 60% Xarel.lo, 20% Macabeo, 5% Parellada, and 15% Sumoll grapes, all biodynamic estate fruit. Classically dry and crisp with a floral nose and toasty body, citrus pith, green apple, saline, and mineral finish. 32 months lees aging in bottle. Disgorged June 2021.
